which has remained resolutely attached to traditional methods although utilizing mechanized engines as well.

A severe pruning and disbudding in the
spring, then thinning at the beginning of
ripening --all adapted to each grape variety—ensures maturation and
maximum concentration as well as a
controlled production.
No work or
treatment is done arbitrarily to the
vines, but rather with respect to nature
and environment to the extent that
grass is sometimes left to grow
between the vines ! 

Each plot thus receives the care
necessary for its particular situation
based on the needs and the
equilibrium of its plants.
